LXCL:We are the Long Beach Food Coalition, a Full Circle Access Model™. We are a no-barriers program that rescues fresh food otherwise headed for compost or landfill and transforms it into prepared meals for our community. We distribute through delivery and a community site, then redirect remaining scraps to urban farmers, gardens, and residents. Our goal is to reduce food scarcity and the 40% of food wasted. Every week, the Long Beach Food Coalition rescues thousands of pounds of fresh, nutritious food that would otherwise go to waste. Because we rely on rescued food, the types and quantities of ingredients we receive change from week to week. Some weeks we have an abundance of tomatoes, peaches, greens, or herbs. Other weeks, we receive none at all.Without a way to preserve these surplus donations, we&#39;re often forced to give away large quantities immediately before they spoil&mdash;even though those same ingredients could help us create balanced, nutritious meals throughout the year.Our goal is to raise $1,400 to purchase a commercial dehydrator.A commercial dehydrator will allow us to safely preserve fruits, vegetables, herbs, and other ingredients for up to 10 years while maintaining much of their nutritional value.
