Your $50 security deposit will be returned 30 days after the Rodeo if you follow all general rules and your space is left clean.

Risk category 1 (RC 1) | Low risk examples 

• Prepackaged, non-potentially hazardous foods (non-PHFs) and potentially hazardous foods (PHFs).
• Includes up to 5 beverage booths that only sell or distribute prepackaged beverages (no opening and pouring of beverages).

Risk category 2 (RC2) | Moderate risk examples 

• Minimal preparation of non-PHFs for immediate service. Examples include kettle corn, candies, tea, dried fruits, spices, cakes, or cookies.
• Minimal food handling and service of PHF that have been prepared in an approved food facility (e.g., slicing cheesecake, serving pizza, making hot chocolate (with milk), making coffee (with milk/creamers), making cocktails (cutting garnishes, lemons, salting rims, muddling mint, etc), making boba, making hot dogs, or nachos from ingredients that come from a hermetically sealed container.
• Includes up to 5 beverage booths that only dispense beverages (such as pouring wine from a bottle or beer from a bottle or can).
• All prepared food is to be discarded at the end of day (includes hot food and any cold food that have exceeded 41⁰F).

Risk category 3 (RC3) | High risk examples 

• Food that is prepared, cooked, reheated, hot or cold held, or cooled at the event or in advance of the event (such as potato salad, chicken pot pies, and tamales, etc.) at an approved facility.
• Includes only service of open PHF’s from an approved food facility, (exception of pizza, refer to category 2)
• Must submit Standard Operating Procedures (SOPs) for review and approval.
• All prepared food is to be discarded at end of day (includes hot food and any cold food that have exceeded 41⁰F).
