In this hands-on, conversation-based workshop, conservation biologist and educator Sarah (Sair) Foltz Jordan will introduce 15 edible invasive plants found in the Midwest and explore how harvesting them for food can be part of caring for local ecosystems. Foraging Grounded in Ecological Stewardship! Using a mix of presentation, fresh and preserved specimens, participants will learn to identify the plants, discuss how and when to harvest them, and explore delicious ways to prepare them. The class will also cover harvesting practices that help avoid spreading seeds and can meaningfully impact plant populations. Participants will have opportunities to look closely, smell, taste, ask questions, share knowledge, and learn from one another. Whether you're new to foraging or already have experience with local plants, this workshop offers a new perspective on our relationship with the plants and ecosystems around us. She founded the Conservation Foraging Center, where she teaches natural history and foraging with an emphasis on native habitat restoration, pollinator conservation, plant and mushroom identification, and ecological stewardship.
