Spaghetti alla Felice is a modern homage to the historic Roman trattoria Felice a Testaccio, which was founded in 1936 and became famous for its theatrical tableside pasta preparations, especially cacio e pepe. The restaurant is one of Rome&#39;s culinary institutions and is closely associated with traditional Roman pasta culture. This dish is inspired by the restaurant&#39;s philosophy of simple ingredients and pasta finished at the table.The result is not a cooked tomato sauce but something closer to a warm, creamy tomato dressing.
