Something is brewing at Catalyst Conversations… Living Cultures: The Art & Science of FermentationAn exploration of microbes, making, culture, and transformation What happens when we invite microorganisms into the creative process? Catalyst Conversations brings together two makers working with living cultures: Yoko Bryden, founder of Hungry Ninja, and Rose Forbes, co-owner of Independent Fermentations (IndieFerm). Together, they’ll lead an intimate exploration of fermentation at the intersection of biology, culinary tradition, cultural knowledge, craft, and creativity—all within the studio of artist Linda Pagani at Midway Artist Studios. Yoko will introduce us to koji, the remarkable microorganism that has shaped Japanese food culture for centuries and lies behind such foundational foods as miso, soy sauce, and sake. Through tasting, storytelling, and hands-on exploration, we’ll discover how koji transforms simple ingredients, producing extraordinary depth, complexity, and umami—and consider how knowledge of fermentation is preserved and passed from one generation to another. Rose will approach fermentation through another living ecosystem: kombucha. Drawing on IndieFerm’s small-batch brewing practice in Plymouth, she’ll reveal the microbial collaboration behind a SCOBY and explore how tea, sugar, yeast, bacteria, time, and local ingredients become something entirely new. Guests will taste the results while learning about the biological processes underlying this ancient—and newly resurgent—practice. Fermentation offers an unusual meeting place for science and culture. It is at once microbial ecology, culinary technique, preservation technology, inherited knowledge, and creative experimentation. And like art, it depends upon material, process, observation, time—and a willingness to relinquish a certain amount of control. Our gathering takes place in the studio of artist Linda Pagani, within Boston’s largest artist studio building, Midway Artist Studios—a fitting setting in which to consider transformation itself as a creative act. Come ready to taste, make, observe, and converse as we explore the invisible communities that have been shaping human culture - and our food - for thousands of years. We’re grateful to have you as part of the Catalyst community. Your generosity makes intimate, interdisciplinary encounters like this possible. This event is included in Luminous Circle Founder patronage. REGISTRATION CLOSES OCTOBER 19 PARKING • Outdoor paid parking: 45 Binford St. • Metered street parking is free on Sundays.
