Like many Ukrainians who have had to flee their home, Viktoriia missed the flavors and community of Ukrainian food culture and decided to open a food truck here in Minnesota, which she named Kozak Corner.&nbsp; &ldquo;Many Ukrainians who came here because of the war left behind homes, careers, friends, and familiar places. Some may never be able to return to the places where they grew up,&rdquo; said Viktoriia. &ldquo;Many of the items on our menu&mdash;shawarma wraps, waffle rolls with caramel filling, garlic potatoes, dumplings, and other traditional comfort foods&ndash; remind people of family gatherings, childhood, student years, and everyday life back home.&rdquo;&nbsp; Doors at 6:30p.&nbsp; MENU:&nbsp; First course:&nbsp;Fresh garden salad with homemade garlic dressing and traditional pickled vegetables Second course: Ukrainian potato &amp; cheese dumplings with caramelized onions and sour cream Third course: Ukrainian Sausage served with garlic-roasted potatoes, fresh dill, caramelized onions, cheese, homemade garlic sauce, and signature spicy sauce&nbsp; Dessert: Zefir &ndash; a traditional Eastern European sweet similar to a giant marshmallow, very popular in Ukraine&nbsp; BIPOC Foodways Alliance and Immigrant Kitchen has elected not to accommodate dietary restrictions - legacy food is an important cultural asset, and asking our co-hosts to change their dishes undermines the deep histories attached to them.This is a difficult decision, as we want as many people to participate in our programming as possible.
